Sprouted Green Mung Bean Tacos
Mexican street tacos stand back, sprouted Green Mung Bean tacos are the new rage. Try these colorful vegan tacos filled with sprouted Green Mung Beans, sauted onions and bell peppers and you’ll be feeling like you’re at a healthy Mexican fiesta!
Sprouted Green Mung Beans Tacos
- 1 tablespoon olive oil
- 1 cup sliced onions
- 1 ВЅ cup mixed red, yellow and orange sliced bell peppers
- 1 teaspoon cumin powder
- Вј teaspoon chili powder
- ВЅ teaspoon paprika
- 1 teaspoon pressed fresh garlic
- 1 teaspoon salt
- 1 cup sprouted Green Mung Beans
- fresh cilantro for garnish
- corn tortillas
1.Beforehand, sprout Green Mung Beans in your Green Mung Beans Sprouting Kit.
2.Heat oil in saut pan on medium high heat.
3.Add onions and peppers to pan and cook until onions begin to caramelize, approximately 10 minutes.
4.Add spices, garlic and salt to the onion and pepper mixture. Stir and cook for 2 more minutes on medium low heat.
5.Add Sprouted Green Mung Beans and mix. Turn off the heat.
Serve on a corn tortilla (roasted over flame). Garnish with fresh cilantro.
This recipe makes 4 to 5 tacos and serves 2 to 3 people. You can always double the
recipe for more to enjoy!
